So, since today is Wednesday and legit 100* outside, I am currently in the AC inside our shop, eating lunch as per usual around 1-2pm and decided to look up the nutritional facts about a few of the things that I eat on a daily basis!
These days i'm on a "Steff's style Greek salad" kick for lunch, which includes: mixed lettuce, black olives, chickpeas, artichoke hearts & feta cheese.
Now, I love salads but I usually eat them for whatever I decided to put ON or IN them. I'm a vegetarian and have been for a while now, & am still getting used to making yummy salads that aren't covered in chicken.
Do i miss eating meat? rarely. I was never a burger eater, i did love chicken (especially my Mom's crispy chicken!) and on occasion I miss it for its crispiness, but other than that I am very glad with my decision to become a vegetarian. I'm no animal rights activist, (i do love animals!) but it was a health decision i had been putting off for years; basically my system doesn't digest meat and it would just sit in my belly and make me sick. SO, to feel like a real normal person again, i kind of had to give up eating meat...and i haven't looked back since!
Nothing is "forever", but for now and as far as i can see in to my future, i will stay a vegetarian!
Anyone who knows me knows that I loveeee food, and cooking~ I also have a huge sweet tooth that i've been trying to curb since i was 2 years old haha.. yummm..cookiess...
Anyways, since i'm always on the go, instead of alwayssss eating out which most of us love to do so often, i like to pack Chris and my lunch every day so we know we are all set and don't have to leave where we are and drop what we're doing to go out on the prowl to find lunch.
Since i'm on a "Greek salad kick" i usually tend to make it similar every day because I like it, and until I get sick of it (which may happen tomorrow...) then i'll switch it up!
I eat a lot of olives and chick peas so I was just looking up the nutritional facts about both of them and what they bring your body upon consuming them... i always forget chickpeas are a legume! YAY for protein that's not from meat! <3 haha I definitely don't eat enough protein, so chickpeas are a good substitute for it daily or every few days.
